P90X2 Vegan Lettuce Wraps!

As I mentioned in my previous post, I purchased the P90X2 Nutrition Guide (on eBay), and have been trying out some of the vegan recipes they have in there.  I wanted to share my experience with their Vegan Lettuce Wraps.  I mostly followed the recipe from the nutrition guide, but made a few tweaks, as you will see below 😉



  • Sesame Oil, 1 tbsp
  • Minced Garlic, 2 tsp (I used about 5 garlic cloves)
  • Grated or chopped Ginger, 2 tsp (I chopped about 1 inch of ginger root)
  • Red Bell Pepper, 1 medium (recipe calls for 1/2 but I used a whole)
  • 1 Carrot, peeled and diced (I chopped my carrots, but I definitely think next time I’ll just use my chopper, b/c the pieces were a little large)
  • 15 oz. of organic extra-firm tofu, drained and crumbled into a bowl (I used Trader Joe’s Organic Sprouted Tofu)
  • 2 tsp of chili paste
  • 1 tbsp of blackstrap molasses (recipe calls for agave nectar, but I’m not a big fan of it, so I used the molasses instead and worked perfectly fine)
  • 1 tbsp of mellow white miso paste (I couldn’t find this at whole foods, so I used their low sodium, gluten-free miso packets – captured in picture above)
  • 3 tbsp of water (I used 1/4 c. since I used a miso packet instead of the actual paste)
  • 1/2 cucumber, peeled and cut into long, thin strips (you’ll see in the pictures, I chopped up my cucumber…because I can’t seem to follow instructions…lol #fulldisclosure)
  • 8 butter lettuce or Bibb Lettuce leaves, washed and dried


Saute Garlic Ginger

  •  Heat sesame oil in a skillet (I used a wok, which I find much easier with these types of recipes) over medium heat and saute garlic and ginger for about 2 minutes

  • Add bell pepper and carrot and saute until soft (I sauteed them for about 5 minutes)

add tofu

  • Add tofu and cook thoroughly for about 5 minutes


  • While tofu is cooking, blend chili paste, blackstrap molasses, miso and water until smooth (as you can see I used my AWESOME Ninja Blender :]; love this thing!)

Tofu with Sauce

  • Then add blended “sauce” to the tofu mixture, and stir for about 3 to 5 minutes


  • Once done, scoop about 1/2 cup of tofu mixture onto lettuce leaf and top with cucumber!  I add a side of brown rice to this meal :] #FTW
